To change folders, at the top left, tap Back. If you can't find the bookmark you want, it might be in a different folder. To open in a new tab or Incognito tab, touch and hold the bookmark.
You can configure to use another search engine instead of Safari by going to Settings app → Safari → Search Engine and selecting the search engine of your choice from the available options: On your iPhone or iPad, open the Chrome app. By default, the search engine is set to Google. On a positive note, 'apparently' iOS14 will be correcting this and you will able to select your default browser like you can on Android phones. Even then though the OS forces a pop up to ask you if you want to open it in Edge. There is one way you can force it - but you have to use Intune to deploy an app shortcut via a Company portal and then you can make Edge open the web app link.

It's so 1990 when Microsoft were doing something similar in Windows with Internet Explorer. Tap the More icon at the bottom of the screen. Use the address bar at the top of the screen to navigate to the web page youd like to bookmark. Go to your home screen and tap the icon in the lower-right corner to open Safari. and iOS is forcibly restricting your ability to pin an Edge shortcut to your home screen to make you use Safari. To create a bookmark on an Apple iOS device like an iPhone or iPad, follow the steps below.

So although you can install Edge, it will never be used to open anything unless you open the app yourselfĪnd browse from there. Unfortunately iOS does not allow you to change the default browser for the OS. I've found my own way to an answer here so thought I would share it.
