To change folders, at the top left, tap Back. If you can't find the bookmark you want, it might be in a different folder. To open in a new tab or Incognito tab, touch and hold the bookmark.

So although you can install Edge, it will never be used to open anything unless you open the app yourselfĪnd browse from there. Unfortunately iOS does not allow you to change the default browser for the OS. I've found my own way to an answer here so thought I would share it.
